Ingredients
lbs chicken breast
1 tbsp olive oil
2 tbsp butter
1 tsp cajun seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp Italian seasoning
3 - 4 garlic cloves, minced
½ cup sun dried tomatoes
½ onion
½ tsp red pepper flakes
1 tsp dried oregano
¾ c chicken broth
½ c heavy cream
¼ c Parmesann cheese
Directions
Step 1
Preheat oven to 375.
Step 2
Season chicken breast with onion powder, garlic powder, smoked paprika, black pepper, cajun & Italian seasoning.
Step 3
Heat cast-iron skillet over medium-high heat and add olive oil.
Step 4
When hot, sear chicken breast for 3-4 minutes on each side & then set chicken a side.
Step 5
Return skillet to stove top and reduce the heat to medium. Then add butter, minced garlic, chopped onions. Sauté for 1 to 2 minutes, or until fragrant.
Step 6
Deglaze skillet by adding chicken broth, then add heavy cream. Whisk to incorporate heavy cream into chicken broth.
Step 7
Once blended sprinkle parmesan into mixture and stir until cheese has melted.
Step 8
Next add sun-dried tomatoes, red pepper flakes & dried oregano, stir to incorporate ingredients. Taste & adjust as desired.
Step 9
Return seared chicken to skillet. Flip to coat all sides of chicken in sauce, then transfer skillet into preheated oven.
Step 10
Cook for 15-25 minutes. (Until chicken reaches 165 internal temperature.)
Step 11
Remove from oven and spoon sauce from skillet over chicken.
Step 12
Serve over mashed potatoes or your desired side and Enjoy!
